4 heaping teaspoons The Spice Way Ras El Hanut
1 Tablespoon vegetable oil
1 onion, chopped
3 carrots, peeled and chopped
2 garlic cloves
1 Tablespoon ginger root, freshly grated

Mix half of Ras El Hanut with meat and form 20 – 24 meatballs. Heat oil in large pan. Fry meatballs for a few minutes on all sides to seal in flavor. Use a slotted spoon to remove from pan and set aside in a bowl.
Sauté onion and carrots for 5 minutes or until soft. Stir in rest of Ras El Hanut, garlic, and ginger and continue to sauté for a couple of minutes. Place meat back into pan.
Add tomato sauce and crushed tomatoes. Stir until mixed. Add garbanzo beans and apricots. Stir until mixed. Cover with the lid and let simmer for 40 minutes. Can be served on rice, quinoa or couscous.
